What happens when I change the name of a vendor? 

If you change the name of a vendor the history also changes to the new name. 

If you change the vendor name or check name on the vendor screen:
The bill will show the new vendor name
The bill will show the new check name.
If the bill was paid prior to the change
The check name will remain the name that was in the system at the time the check was printed.

Note:
Updating the Vendor on the General Screen does not update the 1099 page. If they are a 1099 vendor, you will need to verify/update the 1099 page.When you first enter a vendor the 1099 screen prepopulates some data but, it does not automatically update.
