How to generate a report showing taxable pay and withheld for each employee for a given time period

At times, employers need to provide their employees with information about how much they have been paid, and the amount that has been withheld from the employee.  The best report to use is in:

Payroll → Reports → End of Period → Taxable Pay and Withheld

Even though your fiscal year may not be a calendar year, you can pick the month ending date and select "Calendar Year to Date" to get payroll information for the calendar year for the employee. In the Payroll Summary Report you can choose by payroll, this report does not offer the option to choose by payroll.
